My culinary journey began in my grandmother’s kitchen in the suburbs of St Marc, Haiti. As a child, I was captivated by the way she cooked—effortlessly blending flavors, creating comfort, and bringing people together. Her passion became mine. Over time, I started cooking for my family, then friends, and soon word spread about “Margareth’s food.”

The response was overwhelming. With the support of my community, I turned my passion into a business. Today, Island Ville is more than a catering company—it’s a celebration of culture, heritage, and soul-satisfying meals made with heart.

Acra

Haitian accra, also known as Akra or Malanga Fritters, typically consists of malanga (taro) root, spices, and herbs, all fried in oil.

Lalo

Lalo is a Haitian dish made with jute leaves, also known as Molokhia, ewedu, or Jews Mallow.

Tassot

Tassot is a popular Haitian dish, typically involving fried meat (beef, goat, or turkey) that is first cooked and then fried.

Cremas

Its creamy texture and rich blend of coconut milk, evaporated organic milk, condensed milk, nutmeg, and the perfect combination of white rum, sautéed cinnamon, and star anise make every sip feel like a journey to paradise.

Salad

Island Ville Garden Salad (An elegant selection of fresh or cooked vegetables, tailored to your choice).

Griot

Seasoned pork, marinated in citrus and spices, then slow-cooked and pan-fried to perfection.
Traditionally served with pikliz (spicy pickled vegetables).

Red beans & Rice

A dish made with red kidney beans slowly simmered with herbs, spices, and aromatics, then served over
perfectly steamed rice.

Fried Bread Fruit

Ripe breadfruit slices, lightly seasoned and golden-fried.

Turkey

Turkey legs and wings chunks served Fried or in Creole sauce.

Mac-n-Cheese

Pizza Cut

A rich and savory dish made with seasoned pasta, blended cheeses, and a creamy béchamel-style sauce,
baked to a golden, bubbling finish.

Pate Kode

A deep-fried pastry with a crisp, golden crust and flavorful filling. Offered with your choice of seasoned
shredded chicken or smoked herring (Hareng).

Black Rice & Peas

A Haitian dish, also known as Diri Djon Djon, made with fragrant black mushrooms (djon djon) that
infuse the rice with a rich, earthy flavor and deep color. Cooked with seasoned peas and herbs.
